The Purest Saffron

AZ Saffron saffron is the fruit of the refined and patient Persian art of saffron cultivation.

It is grown using natural methods in the north-east of Iran, a region where the best saffron in the world is produced thanks to the favourable climate in which the crocus plants grow and the traditional methods of harvesting and drying.

The semi-processing of the product (selection of the best pistils and packaging) takes place in Italy at our company’s laboratory.

The name of our saffron comes from an ancient Persian word meaning upper part of the flower (the tips of the red stigmas of Crocus Sativus flower).

This is because our saffron differs from the pistil saffron generally found on the market not only for its noble origins, but above all for the fact that it consists exclusively of the final, more precious and valuable part of the red pistils of the Crocus Sativus flower.

In this way, our AZ SAFFRON saffron stands out considerably for its aroma, flavour and colouring power, qualities that make it the best category of saffron in the world certified according to the international ISO 3623 parameters.

QUALITY CONTROL

Fighting every day against the common saffron sold in powder, often mixed with turmeric, paprika, saffron and ballast powder samples, AZ Saffron imports and sells exclusively pure Iranian saffron in pistils.

Our company makes sure that AZ SAFFRON saffron is of the highest quality through analyses carried out in specialized laboratories according to ISO 3623 standards, introduced precisely to help in the fight against fraud and to help consumers recognize quality saffron.

In this way we certify that our purest saffron does not contain chemical residues resulting from the use of fertilizers, herbicides or insecticides. The analyses are also aimed at detecting the presence and concentration of crocin (colouring power), picrocrocin (bitterness power) and safranal (aromatic power). The crocin, in particular, is the first component to be analyzed, because the other values are dependent on its presence.

As can be seen in the table, the purest saffron AZ Saffron is well above the ISO 3623 parameters for the category of superior quality saffron, values that prove the uniqueness of this product and which demonstrate Master Saffron’s commitment to creating a culture linked to the conscious consumption of this precious spice.
